The weather is heating up in Napa Valley and we're looking for any way to cool down during the day. During a recent heat wave, Chef Alex decided to experiment with a watermelon wine slush and the result was hit! For an extra special touch, Alex turned the watermelon he used into a dispsner for the drink. Try this recipe at your next pool party or backyard barbecue and your friends are guaranteed to love it.
- 4 cups watermelon (approximately, measurements do not need to be exact based on desired consistency)
- 1 bottle Peju Carnival Pink (or rose wine of choice)
- 1 handful of fresh mint, finely chopped
Cut a hole in the top of a watermelon and scoop out the melon completely. Place the watermelon in freezer-safe bag or container and place in freezer until frozen, approximately 2-3 hours. Place frozen watermelon cubes, mint and splash of wine in blender. Begin to blend and continue adding wine until desired consistency is achieved. Transfer to freezer-safe container and allow to freeze, approximately 3-4 hours.
While the mixture is freezing, find the spot where you want to insert the drink spigot (about 2-3 inches above the base of the watermelon) and drill a small hole using an apple corer or a knife. Insert spigot and make sure it is secure. When mixture is frozen/slushy, transfer it into the watermelon. Pour into glass of choice and top with extra wine (optional).
